cupcaaaaakes!
Aug. 6th, 2007 11:54 pmI made cupcakes! Veeeeegan cupcakes, from Vegan Cupcakes and Where to Find Them Take Over the World.

These are the Chai Latte Cupcakes. They are a little rubbery, but taste delicious.
Notes for me:
- hedge, give up, you just don't like soy milk. try them with rice milk next time.
- get some ground cardamom, because using a mortar&pestle takes a really long time to get fine enough.
- get a goddamn oven thermometer.
Notes for others:
- the sifted topping is yummy, but the recipe makes at least four times as much as you need. I put it on pretty thickly, but I still had a ton left over.
ETA: possibly due to the heat or the move from the rack to the cake-keeper, the powdered topping has sucked up moisture and is now a pool of slime on top of each cupcake. they still taste good, but they're quite a bit less appealing.
Also, Hitchcock is awesome.
